Cherry Pie
Ingredients
- 4 cups dark pitted cherries fresh or frozen
- 2/3 cup brown sugar
- 1 tbsp vanilla
- 1 tsp cinnamon powder
- 1/2 lime juice and zest
- 1 1/2 cups all purpose flour
- 1/2 cup cubed cold butter
- 1/4 cup ice cold water
- 1 tsp sugar
- 1 tsp salt
Instructions
Filling
- Add the cherries to a sauce pan with the rest of the ingredients except for the lime
- Once the filling thickens, turn off the heat and add the lime juice and zest
- Add a tsp of cinnamon if desired (optional)
- Set aside and allow to cool
Crust
- Make the dough, divide into 2 equal parts and chill for atleast 30 min or overnight
- Roll out one part of the dough to 1/8 inch of thickness and slightly wider than your 9 inch pie plate
- Place the rolled out crust on to the pie plate and let it rest in the fridge while you make the top
- Use the other half of the dough to make your favourite decorations
Assembly
- To assemble your pie, add the cherry filling and top it with your decorations
- Bake at 375°F for 30-40 mins
- If needed, Cover with foil after 20 mins to avoid the top from browning too much
- Remove and chill the pie at room temperature for 2-3 hours before serving
