Cherry Pie

Cherry Pie

Ingredients
  

  • 4 cups dark pitted cherries fresh or frozen
  • 2/3 cup brown sugar
  • 1 tbsp vanilla
  • 1 tsp cinnamon powder
  • 1/2 lime juice and zest
  • 1 1/2 cups all purpose flour
  • 1/2 cup cubed cold butter
  • 1/4 cup ice cold water
  • 1 tsp sugar
  • 1 tsp salt

Instructions
 

Filling

  • Add the cherries to a sauce pan with the rest of the ingredients except for the lime
  • Once the filling thickens, turn off the heat and add the lime juice and zest
  • Add a tsp of cinnamon if desired (optional) 
  • Set aside and allow to cool

Crust

  • Make the dough, divide into 2 equal parts and chill for atleast 30 min or overnight
  • Roll out one part of the dough to 1/8 inch of thickness and slightly wider than your 9 inch pie plate
  • Place the rolled out crust on to the pie plate and let it rest in the fridge while you make the top
  • Use the other half of the dough to make your favourite decorations 

Assembly

  • To assemble your pie, add the cherry filling and top it with your decorations 
  • Bake at 375°F for 30-40 mins 
  • If needed, Cover with foil after 20 mins to avoid the top from browning too much 
  • Remove and chill the pie at room temperature for 2-3 hours before serving
