Matcha Crepe Cake
Ingredients
- 1 cup all purpose flour
- 3/4 cup oat milk
- 1 tbsp sugar
- 1 tsp salt
- 1 tsp matcha sieved
- 2 tbsp oil neutral
Filling
- 3 cups strawberries fresh
- 1 cup cream cheese
- 1/2 cup icing sugar
Instructions
- Mix everything but the cream cheese and icing sugar in a large bowl and gently whisk to make a smooth batter.
- Heat a nonstick crepe pan and gently ladle the batter and swirl around to cover all the edges.
- Let the crepe cook for two minutes and set aside.
- Repeat this process with the rest of the batter making sure the crepes are uniform in size and thickness.
Filling
- Mix the cream cheese and sugar to get the filling ready
Assembly
- Spread the cream cheese mix evenly on the crepe, followed by the strawberry slices
- Repeat the process with the remaining crepes, dust with matcha and enjoy!
