Not only are we making vegan rasmalai, but we’re also about to make it in 2 minutes! For real though, single-serve recipes are going viral everywhere and I totally get the hype. I for one, make a mug-cake at least once a month (usually during my periods, the cravings are real y’all!). I love how convenient and fuss-free microwave recipes are.
After I created my vegan rasmalai recipe, there were many days when I really wanted to pop one in my mouth but didn’t want to spend a whole hour making them. Many of you reached out to us saying how good the rasmalai recipe looked but since you live alone, you’re thinking twice before making a big batch of them.
That’s when I thought, we all should have the luxury of making rasmalai, just for ourselves. A recipe that takes no more than 2 minutes to make and uses 1 bowl and minimal equipment. I’m happy to report that I’ve succeeded in my mission and I present to you, dare I say .. the BEST microwave rasmalai ever!
Next time you’re craving something sweet, swap your mug-cake with this. After all, some cravings can only be satisfied with Desi foods! Let’s get into the recipe without any ado.
What is Rasmalai ?
Rasmalai is a very popular Indian dessert made from paneer (Indian cottage cheese). It basically is cottage cheese balls soaked in reduced rose-cardamom flavored milk. It originates from West Bengal (a state in India) but is enjoyed as a favorite dessert all over India.
What makes Rasmalai non-vegan ?
Rasmalai traditionally is vegetarian (meat & egg free but not dairy-free). Paneer and milk are the main ingredients that make it non-vegan.
How did you re-create a vegan version ?
We use tofu in place of paneer and any plant milk in place of dairy.
Is this version identical to the non-vegan version?
This recipe literally comes together in 1 minute, so to make that happen we obviously cut some corners. It comes very close, but if you’re looking for a more traditional and detailed recipe, definitely checkout our Vegan Rasmalai. It follows the traditional non-vegan procedures very closely while making vegan swaps wherever needed.
I have allergies, what can I substitute?
If you are allergic to soy, you can use any soy-free tofu alternatives. You can use any plant-milk that’s allergy friendly for you.
