If you’re not familiar with shishito peppers, now’s the time to get to know them. They’re a mild pepper variety that taste incredible when lightly roasted and seasoned with salt. We’re taking it up a notch by stuffing them with potatoes.
Stuffed Shishito Peppers
Ingredients
- 10 shishito peppers
- 1/2 medium potato
- salt
- chilli powder
- 1 tsp cumin seeds
- 1 tbsp oil
Instructions
- Wash and cut a medium sized potato into half. Boil it in water or microwave it.
- Mash the potato and add seasonings of your choice. I’d go with some salt and chilli powder to keep it simple.
Peppers
- Rinse the peppers under water and tap them dry with a clean cloth
- Slit the peppers lengthwise and stuff them with potato filling
- Heat up a skillet on medium-high. Oil the surface generously and go in with your cumin seeds
- Place your peppers in the pan and let them cook for 15 minutes stirring occasionally
- Take them off heat and sprinkle with some salt and a squeeze of lime if you like
- Enjoy with a side of steaming hot rice or as is!
