Rinse the peppers under water and tap them dry with a clean cloth
Slit the peppers lengthwise and stuff them with potato filling
Heat up a skillet on medium-high. Oil the surface generously and go in with your cumin seeds
Place your peppers in the pan and let them cook for 15 minutes stirring occasionally
Take them off heat and sprinkle with some salt and a squeeze of lime if you like
Enjoy with a side of steaming hot rice or as is!
