Loaded Nachos
Ingredients
- 1 tbsp oil neutral
- 1 cup soy curls soaked in veg broth for 2 hours
- 1 tbsp taco seasoning
- 200 gm tortilla chips
- 1/2 cup black beans cooked/canned
- 2 tbsp onion finely chopped
- 4 pickled jalapeño
- 1 tbsp mango finely chopped
- 1/4 cup cheese shreds
cream
- 3 tbsp sour cream
- 1 tsp jalapeño chopped
- 1 tsp garlic paste
- 1 tsp cilantro finely chopped
- 1 tbsp lime juice
- 1 tsp salt
guacamole
- 1 medium avocado
- 1 tsp cumin powder
- 1 tsp cilantro finely chopped
- 1 tbsp lime juice
- salt to taste
Instructions
- Heat 1 tbsp of oil and stir fry your meat alternative of choice on medium flame for 7-10 minutes
- Once cooked, season with taco seasoning and salt and set aside
- Mix all the ingredients for the sour cream sauce and set side
- Similarly, mash an avocado and make guacamole with above listed ingredients
Assembly
- add your chips to a platter
- Top with your meat alternative, beans , chopped onion, tomato, jalapeños and mango
- Top with guacamole, sour cream sauce, cheese shreds and enjoy!
