Malai Kofta

Malai Kofta

The Malai Kofta of your dreams!

Ingredients
  

Kofta Balls

  • 2 cups Grated Tofu
  • 2 cups Boiled Potato
  • 5 tbsp Almond Flour
  • 1/2 tsp Salt
  • 1/2 tbsp Cumin Powder
  • 1/2 tsp Coriander Powder
  • 1 tbsp Paprika / Chilli Powder
  • 1/2 tsp Turmeric
  • 1/2 cup Chopped Onions

Gravy

  • 2 tbsp Neutral Oil
  • 1 cup Onion Puree
  • 1/4 cup Chopped Onions
  • 2 cups Tomato Puree
  • 1/2 cup Cashew Cream
  • 1 tbsp Ginger-Garlic Paste
  • 1 tbsp Salt
  • 1/2 tbsp Chilli Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Garam Masala
  • 1 tsp Kasuri Methi

Whole Spices

  • 1 Bay Leaf
  • 1 Cinnamon Stick
  • 2 Cardamom Pods
  • 1 Star Anise
  • 1 Mace

Garnish

  • Fresh Chopped Cilantro / Coriander Leaves
  • Cashew Cream

Instructions
 

For Koftas

  • Combine all ingredients for kofta and form a nice dough. 
  • Shape them into balls, either deep fry them or bake them at 350F for 40 minutes, flip them halfway.
  • Keep them aside and make the gravy.

Gravy

  • Heat a saucepan, add oil. Roast the whole spices until fragrant.
  • Add in onion puree, chopped onions, ginger garlic paste and cook until the raw smell is gone.
  • Add the tomato puree and cook for another 10 minutes until the tomato is fully cooked.
  • Add the rest of the ingredients, add water if needed and let the sauce/gravy simmer for 30 minutes on very low flame.
  •  Keep stirring every couple minutes and add water as needed.
  • Add in the baked/fried koftas, garnish with cashew cream and coriander.

Serving

  • Serve with warm naan or rice.
