Rajma Bolognese
Ingredients
- 2 cups Boiled Rajma / Kidney Beans
- 3 cups Chopped Tomatoes
- 2 Medium Carrots Chopped
- 1/2 Medium Onion Chopped
- 4 Garlic Cloves Minced
- 2 Celery Sticks Diced
- 1 tbsp Olive Oil
- 1 tbsp Vegan Butter
- 1/2 cup Vegan Milk
- 4 Servings of Any Cooked Pasta
Spices & Seasonings
- 1 tsp Garam Masala
- 1/2 tsp Coriander Poweder
- 1/2 tsp Cumin Powder
- 2 Kashmiri Chillies Crushed
- 1 tsp Salt
Instructions
Veggie Prep
- Dice the onion, mince the garlic and shred the carrots and celery sticks.
Sauce
- In a saucepan, add olive oil and butter. Add onions and let them sweat.
- Go in with the rest of your veggies and sauté for 10 minutes.
- If using canned beans, wash the beans thoroughly. add the beans to the pan.
- Add salt, cumin powder, coriander powder, garam masala, Kashmiri chilli and sauté for 1-2 minutes.
- Now add the tomatoes and vegan milk.
- Ideally, the sauce is to be left to simmer slowly for 3-4 hours. But leave it to simmer at least for an hour for a flavorful Bolognese.
Assemble
- Add your favorite pasta.
- Top it off with vegan cheese or nutritional yeast and enjoy 🌱
