Rajma Bolognese

Rajma Bolognese

Ingredients
  

  • 2 cups Boiled Rajma / Kidney Beans
  • 3 cups Chopped Tomatoes
  • 2 Medium Carrots Chopped
  • 1/2 Medium Onion Chopped
  • 4 Garlic Cloves Minced
  • 2 Celery Sticks Diced
  • 1 tbsp Olive Oil
  • 1 tbsp Vegan Butter
  • 1/2 cup Vegan Milk
  • 4 Servings of Any Cooked Pasta

Spices & Seasonings

  • 1 tsp Garam Masala
  • 1/2 tsp Coriander Poweder
  • 1/2 tsp Cumin Powder
  • 2 Kashmiri Chillies Crushed
  • 1 tsp Salt

Instructions
 

Veggie Prep

  • Dice the onion, mince the garlic and shred the carrots and celery sticks. 

Sauce

  • In a saucepan, add olive oil and butter. Add onions and let them sweat.
  • Go in with the rest of your veggies and sauté for 10 minutes.
  • If using canned beans, wash the beans thoroughly. add the beans to the pan. 
  • Add salt, cumin powder, coriander powder, garam masala, Kashmiri chilli and sauté for 1-2 minutes.
  • Now add the tomatoes and vegan milk. 
  • Ideally, the sauce is to be left to simmer slowly for 3-4 hours. But leave it to simmer at least for an hour for a flavorful Bolognese. 

Assemble

  • Add your favorite pasta.
  • Top it off with vegan cheese or nutritional yeast and enjoy 🌱
