If you are unsure about tempeh, this recipe might convert you into a tempeh lover. Tempeh is a great protein source for vegans. Because of it’s strong flavor profile, many people don’t even bother trying it. But just like many foods, tempeh is an acquired taste. Once you learn how to prepare and season it, it can be a joyful addition to your cooking repertoire.
Tempeh Lettuce Wraps
Ingredients
Filling
- 1 block smoked tempeh
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 1/4 cup finely chopped carrot
- 1/4 cup finely chopped celery
- 2 tbsp tamari
- 1 tbsp miso
- 1 tbsp gochujang
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1/2 tbsp ground ginger
- 1/4 cup roasted cashews
Sauce
- 3 tbsp vegan yogurt
- 1/8 tsp kala namak
- 1 tsp finely chopped jalapeno
- 2 tsp lime juice
Instructions
Filling
- Sauté all the vegetables starting with onion for 4 mins on medium flame
- Once the vegetables look cooked, add in your crumbled tempeh
- Add a splash of water if needed and let it cook for 4-5 minutes
- Add tamari, gochujang, miso and the other seasonings and let cook for another 5-7 minutes on medium
Assembly
- Once cooked serve with fresh lettuce boats
- add generous amount of sauce
- top with roasted cashews and enjoy
