Tempeh Lettuce Wraps

Ingredients
  

Filling

  • 1 block smoked tempeh
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup finely chopped carrot
  • 1/4 cup finely chopped celery
  • 2 tbsp tamari
  • 1 tbsp miso
  • 1 tbsp gochujang
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 tbsp ground ginger
  • 1/4 cup roasted cashews

Sauce

  • 3 tbsp vegan yogurt
  • 1/8 tsp kala namak
  • 1 tsp finely chopped jalapeno
  • 2 tsp lime juice

Instructions
 

Filling

  •  Sauté all the vegetables starting with onion for 4 mins on medium flame
  • Once the vegetables look cooked, add in your crumbled tempeh
  • Add a splash of water if needed and let it cook for 4-5 minutes
  • Add tamari, gochujang, miso and the other seasonings and let cook for another 5-7 minutes on medium

Assembly

  • Once cooked serve with fresh lettuce boats
  • add generous amount of sauce
  • top with roasted cashews and enjoy
