Chai Bubble Tea

Ingredients
  

  • 2.5 cup water
  • 1 stick cinnamon
  • 1 star anise
  • 6 crushed cardamom pods
  • 1/8 cup chopped ginger
  • 1/4 cup brown sugar
  • 2 tbsp coconut condensed milk

Instructions
 

Chai Syrup

  • Bring 2.5 cups of water to boil
  • Add all your spices, cover and boil for 10 mins
  • Add your brown sugar, stir well.
  • Take half cup of the liquid aside to make the pearls.
  •  Add 2 tbsp of black tea and let it simmer for 4-6 mins and take it off the heat.

Pearls

  • In a microwave safe bowl, add 1/4 cup tapioca starch and 1/2 cup of the reserved liquid.
  • Microwave for 50-60seconds on low heat, stirring at 10 sec intervals
  • Dust the dough with generous amounts of tapioca starch and shape into pearls
  • Boil them for 6-8 mins on medium flame and keep aside.
  • In a pan on low heat, add your condensed milk.
  • Stir occasionally until it starts to caramel and turn slightly golden
  • Add your boba mix well and take it off the heat
  • Assemble your drink with the boba, plant milk of your choice and the tea.
